Assuming your weapon has a prefix (ethereal or an element): it has an extra strike: void strike, or an element strike. Ethereal also does void damage.
Once you get to IW10, an ethereal weapon will gain an elemental strike in addition to its void strike (picked randomly), and an elemental weapon will get void strike and making its damage change to void
This means any prefixed weapon at IW10 can get 2 strikes without the need of infusions, and do void damage. A third strike can be added with an infusion. The maximum strikes on a weapon including infusions is 2 elemental and 1 void strike.
A weapon without a prefix can still get this, but they'll need 2 infusions to do it. You can also achieve it pre IW10 by using a voidseeker on non ethereal weapons (for void strike and void damage) and infusions.
(Note: voidseekers give bonus attack accuracy, so at lower level, they can be desirable even if you are using ethereal if you don't have 200% accuracy yet)
I can't really comment about the dw part, since I'm more of a 1h player I don't know much about that playstyle

I edited my post while you were writing this with even more questions, but this was the main thing I wanted to know. I had wondered if the elemental strike
replaced void strike, which would have been weird to say the least.
And I'd forgotten that ethereal actually deals void damage with normal attacks too, even though that was the primary reason I'd been hoarding them for a year or three.
The way I DW is damage per second with a ton of support spells thrown up to increase evasion (plus spark of life in case I get screwed on a given turn).
So far it's working (just on Nintendo difficulty though).
In the past I was DW'ing with full cloth on Nintendo, which was a bit harder but also made my spells much stronger. So that's why I've been seeking out shade armor with the arcanist suffix now (I miss how strong my spells used to be). Not had much luck there
except for the chest I found in the bazaar.
