Maybe my 25% Spirit Shield is good enough that I can start using it constantly and rely more on just Regen rather than Regen + Cure. I should try it and see how many spirit pots are needed compared to current mana pots.

Well, you'll also have better stats, and your equipment scales with your level (monsters too, but less so).

I had read a number of posts saying that Stun wasn't very good because mobs will still gain MP/SP and often use them when stun expires - and normal attacks are nothing to worry about. Another thing is that if there are more than 4 or so, it wouldn't seem like just 1 being stunned wouldn't have that much effect anyway..?
I'll try Axe + Rapier offhand. I hadn't tried that because I was worried the offhand's less likely proc chance wouldn't keep Penetrated Armor up long enough.
Hallowed is great, though it's much better to level it up in IW to 10 for Void damage + Void Strike (especially against SGs). The Holy EDB makes your Cure spell recover more HP, and Holy Strike is one of the best strike (the other best are Void and Dark strike). With an ethereal rapier, you only have 33% chance of getting Holy or Dark strike at IW lvl 10. However, your rapier is a rapier of slaughter, which is better used in 1H style. As a reminder, the offhand weapon in DW style gets -50% damage, so Balance (more crit and offhand proc) or Nimble (works great with the +50% parry from offhand) would be more appropriate.
Normal monsters shouldn't be a problem, you can dispatch them quickly with Frenzied Blows (or the OFC if you have it). Stun on SGs means they won't be able to attack most of the time, and you can often keep the procs on by attacking two different monsters alternatively. You can use Silence if you are worried about skill attacks.
