Probably not optimal but early-game does not seem conductive to credit-making.
Take Heroic health potions with you if you don't already. The health regen will keep you alive for longer and allows you to go light or heavy without having to worry about spells too much. 1 or 2 mana pots will suffice for now, until you put a few points into regen, keep it that way.

Does this affect the ability to carry potions into battle? I have Lesser/Greater HP and MP potions in my battle items list but I can only use one for the entirety of the battle sequence... At least, as far as I have gotten in Grindfest after using a potion. Not sure if there is a cooldown that goes away or if I can not use a potion for the rest of the matches. So I have about 200k saved up right now and I was wondering what the best course of action in using it would be. I want to play holy mage but I don't have any items that are good for holy yet. So I was wondering if I should invest in getting a holy set right now so that I can start to train the proficiencies or if I should just wait and do with what I have at the moment and train skills. Or even if I should just get upgrades for what I have right now and continue doing elemental mage. My current gear looks like this: StaffCapRobeGlovesPantsShoes

I have next to no experience with dual wield, but if you're having problems with MP, you could try using Focus a bit more, especially in the early easy rounds.

You don't need to use skills or Spirit Stance in every round, though. During some rounds, you could slow down and dedicate your Overcharge to recovering MP with Focus. I think you just have to find a balance between skills, Spirit Stance, Focus, and mana potions.
Ether Theft might not work well. You'd have to cast Smite over and over to proc Soul Fire, then you'd have to cast Drain on enemies that have Soul Fire. Keep in mind that your spells would also be evaded (due to low Magic Accuracy) and resisted. You'd probably just use more MP than you'd earn back with Ether Theft. Also, you'd need to use a fair number of Ability Points and Supportive Ability Slots to get all of the necessary abilities for this.
