Love Hina did it for me. I was in my early teens, and it was just perfect to watch. Hilarious, beautifully drawn, and emotional. Still to this day, one of the best harem anime, and I don't even like harem anymore.
I know this is a little off-topic, but since then, I've found my unique taste. I try to stay completely away from the mecha genre. I veer more towards psychological seinen. If an anime doesn't have good music, I won't continue with it. I stopped watching shounen for the most part, with the only exception being if it is freaking funny. A good example of what I look for is Monster.
