For the hourlies, staff in light armor. For scanning monsters for the wiki, mace+shield in heavy armor. For RoB, mace+sword chucks in cloth. For everything else, estoc in light armor.
I keep it mixed up to keep all my proficiencies maxed.
Dual wield for hourlies, short arenas, and RoB (although I like dual wield so much I often use it for long arenas too). Two-hand for long arenas and item world. I use mace or estoc depending on my mood (although I prefer estoc). I also primarily use Shade armor although I want a good Power set to play around with (so far I only have the leggings (IMG:[invalid] style_emoticons/default/smile.gif) ).

I usually use a shortsword and a shield for almost everything, and 2H Greatsword for grindfest (hard). I'm thinking about switching to mage, but I heard they're slightly more inefficient.
Niten Ichiryu, it seems to be very underrated but if you have two decent weapons combined with probably the best "skill" there is its the most powerful melee there is, of course you also need to have decent proficincies in both Dual and Two handed though
