To put it simple, there are 5 fighting styles in the game:
Staff
1-H
2-H
DW
Unarmed
With the last one giving pretty hefty bonus to accuracy, and is what you get when you have no weapon equipped.
Staff, 2-H and DW are easier since they take up both hands.
1-H means using pretty much anaything that doesn't fall into the other categories. Usnig a single 1-handed weapon means you are 1-H. Using a shield means you are 1-H, even if you got no weapon equipped. Using a single weapon in your off-hand (like DWer would) still sets you as 1-H fighting style.
And you can have block even if you another fighting style, if you are weaing shield armor, it just won't really matter though.
Thing is, tehre is no benefit in leaving a hand slot open and only using one 1-H weapon or shield, since an empty hand gives no bonuses.
Slap in a shield in the other for block
Or another weapon for increased damage, hit chance, crit chance and parry.
