You want salt in your butter or not?
Here is my random take. Adding higher quality salt to unsalted butter tastes better in cooking.
I only bother for sauces though, and certain recipes.
I've only been eating bulk Western Star atm due to budget. Not terrible. Probably above average compared to other countries except some in Europe. They have been around for nearly a century so must be doing something right. '
I think they have a higher end gold star variety but I have never seen it anywhere. I think they just use it to win awards as a halo product. The chef's choice cultured is available, but only a bastardized version of the gold star mixed with canola is available in stores atm.
edit: The Bill Gates 'butter' is worse than expected. They talk about it being '100% oxidized' like that is a selling point.
Bill Gates neo-butter: Lowers testosterone by affecting mitochondrial function in Leydig cells.
Quality real butter: Raises testosterone by providing healthy saturated fats that are part of the building blocks for hormone production. Grass fed cows also product milk that is higher in anti-oxidants which improves fertility.
Why does every food product Bill Gates touches lower fertility?
