Slay the Spire is pretty good. FTL is a classic for a reason. Into the Breach as well.

Rogue's Tale if you want a proper roguelike. Or Cataclysm: Bright Nights, although that game wildly expands on the concept of a roguelike.

Have been playing Dead Estate quite a bit recently thanks to the update that just dropped (haven't played in a long while before that) and was pleasantly surprised.

Feels very manageable compared to others while having a degree of difficulty and risk management. Unlike, say, Nuclear Throne, looping a run doesn't feel like a borderline guaranteed death sentence (unless you're Mumba, in which case the entire game does if you're unlucky enough to not have any health upgrade items generated).

The fact that it's built around established poker rules makes it very easy to pick up if you've ever played any amount of poker, which gives it a distinct advantage since you're not asked to learn an entirely made up game from scratch, and then a host of modifiers to it, but rather expand upon stuff you already instinctively know.

Noita has a lot of crazy physics interactions, and you can make wands with complicated chains of spells you acquire over the course of a run.

Alina of the Arena, perhaps? It draws a lot of influence from Slay the Spire, but the combat occurs on a hex grid, and you can move around to evade attacks. You can also sometimes trick enemies into attacking each other, which is always fun.
