For the letters, it represents the bonus attributes in that gear, S for Strength, then Dexterity, Agility, Endurance. Obviously the more the better, but most gear only have 3 at maximum, though some light armor can have all SDEA
And yes, gears have level requirements, though most average gear are unassigned, and their level will be matched to the equipper once equipped.
Note the rule in this free shop, that you are not supposed to ask for gears above your level

Correct, the idea is that heavy armor gives you better damage mitigation but less evade, which is preferable for 1H play since you want to get hit to counter. I would have chosen the same items as you, except maybe Kite Shield instead of Buckler since the %block is higher, but that's minor. Now let's wait until jsldz goes online and read your post. If he doesn't realize you have edited your post, like in couple days, might be a good idea to repost it. Otherwise send me a PM, maybe I can arrange something for you.
