I will continue avoiding Akira as long as possible. There's definitely a heavy cyberpunk emphasis on this list, looking over it. And a heavy AIC tilt. Yes, I have seen Ghost in the Shell, and no, I do not want to watch Evangelion yet because it's probably going to depress me too much if I do.
Some things I have finished reading/watching (and my ratings, out of five stars):
Bubblegum Crisis (AIC, Artmic, Youmex) (★★★★★; would probably be 6/5 if it hadn't been 'cancelled' four episodes early).
Chobits (manga, CLAMP) (★★★★★)
Ranma ½ (manga, Rumiko Takahashi) (★★★½)
Inuyasha (manga, Rumiko Takahashi) (★★★★)
Dragon Ball (and Z) (manga and anime, Akira Toriyama) (early series: ★★★★; post-Red Ribbon Army: ★★½ or lower)
Dr. Slump (manga, Akira Toriyama) (★★★★)
Jitsu Wa Watashi Wa (manga, "In truth, I am..."/"Actually, I am...", or something like that) (First half: ★★★½, Second half: ★★★★½. Highly recommended, and not just because I briefly helped with the scanlation near the end. Cute and dumb. Art style changes a lot as it goes on)

Watch the first movie, if you really like it, then you can watch the series. The series is like slice of life comedy with police mechas that eventually has story. The movies only really focus on the more serious story side. The three movies were quite different to each other though.
Gunbuster's sequel is Diebuster which I also liked. Die Buster had different directors for its episodes, so that also gave it a different feel episode to episode despite the screen plays clearly in synch with what Gainax wanted.
Another older anime from the cel era is Fight! Iczer-One. It was released as several OVA episodes, but then was reissued as a theatrical movie edition which is the version I preferred. As with Gall Force, all of the species' characters are female. The Iczer-One soundtrack is very good considering that it came out in the 1980's. The low-res youtube Iczer-One movie is slightly NSFW. And if you like some of the snippets of music from the anime, I strongly recommend the Iczer-One Battle Music Collection available on nyaa. Unlike other modern anime soundtracks, the music tracks were made to be listenable as real audio music tracks rather than as sound effects tracks.
