Great choice. Might be mine, too, although I read it a lot more than I watched.
Apart from that, I think my top contenders would (currently) be Bubblegum Crisis (if OVA's count - purely due to episodes 5 and 6), Kill la Kill (kind of garbage, but I like it anyway), Cowboy Bebop.
It should be noted that I have many gaps in what I've seen. Not seen evangelion, for instance. I kind of anticipate hating it because apparently all the characters are horrible people, but really hope I'm wrong whenever I finally get around to it because it's thoughtful and making a point, or something. I really enjoy when there's social commentary, character studies, and examination of human flaws.
I don't mind massive plot holes if the plot is just a nice excuse to explore the characters and human nature and ask interesting or tough questions. If it can make me think or feel something, and that feeling isn't "god damn do I hate this show," it's probably good.
Also, the mid 2000's were a black hole of forgettable anime for me. Especially since I don't like the "big three" of the period that much.
On a second tier of things I like are cute and dumb things, but not like K-On. Chaotic evil with cute characters is way better.
