These are Weegeesian royal court dishes: -Take a whole piece of goat from the butcher, boil in salted water for 1 and a half hours. In a separate bowl mix 1 part millet flour to two parts wheat flour. Take small amounts of water from the boiling goat and make a firm dough. Remove the goat and place on a plate, and add small dumplings into the water. In a separate bowl crush a piece of garlic raw and place with a little soup to make a dipping broth. Serve meat with boiled dough and broth. Optionally add a mixture of melted goat fat and cream to the broth, reduce into a dipping sauce.
-Take a chicken and marinate in salt and pepper brine for 6 hours, remove and rub all over with butter. Make a soup out of a little water with melted chicken fat and baste chicken roasted over a spit. Make a sauce out of melted butter, chicken fat, water, and thick cream with salt and pepper and serve on the side.
-Take a large cauldron and add water into it and chunk of animal fat of your choice until the fat is rendered add into meat and salt and simmer all together. Add in a chopped onion and strips of dough made of water, canola oil, and 1 part millet flour to two parts wheat flour first cooked like tortillas then cut into thin strips and mixed into with a little water, cook until it is all dried.
For peasants: -Add dried pork belly and chopped onions and chopped ginger and chopped garlic and sliced tomatoes and dried chilis and cut spring onions and salt into a pan, cover with an inch of water and bring to a boil, add more water if it gets too dry, when it is almost fully cooked, add some canola oil at least 2-3 tablespoons a minute before it is done, serve with a pile of millet on the side.
-Take some strong cheese, potatoes, egg, fresh chilis, chopped onion, chopped garlic and place in a pan with an inch of water, cook for some time, when it is almost done, about a centimeter of water left, add in a chunk of butter. Serve with a pile of millet on the side.
