I've smoked over 10 pounds of this stuff for 8 hours. I had to go back and refill my hickory chips and water every hour or two. As you can tell, I love smoked salmon and now I have to vaccuum seal these things.

Technically the ban was lifted. The problem with horse meat in America:
1.) When it has been allowed its been quite popular
2.) Horses represent freedoms, and you can't infringe on freedoms by eating it. So they take away the actual freedoms to protect symbolic freedoms.


In Australia in meat pies you can use beef, buffalo, camel, cattle, deer, goat, hare, pig, poultry, rabbit, kangaroo and sheep. Horse has to be specified, but any other of the listed meats can just be listed as meat. Kangaroo and Beef usually have a premium so they are usually listed specifically. Horse can be sold in most states but there is strict enforcement that it can only be sold as horse meat. Whereas sheep usually mutton (as lamb now has a premium) can be sold as ham or steak if they do not specify pork and beef respectively. The dodgy one is depending on how its labelled selling Mutton as Lamb, something to do with how its packaged eg if its cryovaced and frozen.

I don't think Donkey meat is allowed to be sold in the US or Australia. Though Australia does sell large volumes of donkey dicks to China.
