Regarding maxed weapon proficiency, assuming I have the following weapons:

ethereal axe
non-ethereal axe with elemental prefix

And I level both of them to item level 10, they'll both have void strike + elemental strike, right? So basically it's always better (as melee build) to have an ethereal weapon rather than elemental weapon, because ethereal has no burden/interference, right?

No burden/interference is nice, but past a certain point it won't affect you enough for you to care. (and, having a significant amount of burden is sometimes desirable for high level players who play 1h and want to block - counterattack as much as possible, rather than evade)

If I were you, I wouldn't worry about it either way, just get something to IW10.

Salvage cloth & wood
Sell others.

Staff: cheapest is Elemental play style with imperil style. Best staff is destruction. Make sure it's matching in all possible ways. Divine / Dark are more damage especially against SG. But easier and cheaper to play SG on hard, and play PFudor for everything else with element style+imperil.

prices may go even higher if one of the buyers want to take all items, or may even fall completely if one of them shrined enough trophies to decide he didn't earn anything good. really, who knows? you should decide by yourself.

I thought 3 strikes is possible. Infusion of same element as your first or second strike does nothing. Just add a 3rd strike (holy) to your weapon when facing schoolgirls.

I'm not sure how it works but I thought +2.5% was correct? If it needs to be changed I will gladly do it, just need conformation from other experts that it's 5%

iirc 2.5 was correct. it's that kind of things that is asked so many times that i'm tempted to add it in wiki.
