If you're going for maximum bleed damage, just put the 4-turn axe in the main hand and the 2nd-highest damage weapon in the off hand.

As E-Hentai Wiki Wrote (See below) Of Course, Your wakizashi should be offhand Weapon because The offhand weapon also gets a 50% boost to its Parry.
One-Handed Style I would like to use Rapier + shield more than those three weapon.
Equipping two one-handed weapons has a chance to proc Offhand Strike on hit, which will cause an extra attack against the targeted enemy with the same damage type as your offhand weapon. Offhand Strikes also have the chance to proc their own weapon proc. In the event that both weapons proc during the same attack, the offhand proc will take effect first, and if both weapons have the same proc, the mainhand's proc will override the offhand's. Offhand weapon damage is reduced by 50% - 1% per 10 points of dual wielding proficiency, capping at 250 proficiency (25% damage reduction). The offhand weapon also gets a 50% boost to its Parry.
This has changed.... The parry is still +50% but the proc% and turns are combined if the same effect. See
here.

Are there any good reasons to save up ability points, or is it better to spend them as I earn them? Also, are the HP, MP, and SP tanks any good?
Not many. Spend them on HP/MP tanks. Those will make the arena a whole lot less frustrating place. You can (sparingly since it goes up every time) use the AP reset to reset your ability tiers in case you totally hate the abilities you chose.
