Weapon that is originally ethereal has damage type void and elemental strike.

Ethereal still wins.
Besides, as you level that "little interference and burden" get larger and larger.

Yea, ethereal gets a random elemental strike at 10, so it can become superior IF you are lucky.
If you are unlucky it gets an inferior bonus and you wasted 10 potency levels of grinding.
For mages things are a bit different since staves don't have interference to begin with, and only the elemental weapon has a +25% EDB, the level 10 ethereal only get the melee bonus for a random elemental and not the magic bonus.
Also, I was not aware that interference and burden scaled up with your level. I thought they were constant like mana reduction.

Yea, they can. (I spent several hundred trophies on it on get a few phases).
