Just for reference, on a DW build, and on a 1H Heavy build, what are precise numbers for the base stats that I should be looking for, what should I be increasing and when, and should I ever reach a point where I just never touch a stat again, and where would that be
I get the feeling that I've severely messed up somewhere.

Unfortunately there are no absolute numbers in this game unless you have a peerless build. It's better to screenshot your stats and equipment then throw them here so people can see what's wrong with your build.

Well, for 1H you should look at two things. 1st your attack speed bonus should be 0%. Personaly i use this as a help to set Agi just one point below the 0.1% because it gives also a small PM bonus. Also when you reached 20% i would suggest to never touch Wis again. Except to set it down when you get additional Wis as bonus point from a artifact. And Int, well actually you could even set that too zero, because it adds nothing to a 1H build. Personaly i have set it to 150 just to get a few Spritit Points.

I've been stumbling around in the dark for the entirety of my Hentaiverse career, but the only thing I ever got without my own two hands is the rapier. So at least I'm rather self-sufficient.

For 1H, STR=DEX, highest. Keep agi low enough to prevent attack speed bonus, less speed=more counter attack= more damage. You don't need any intelligence at all. For melees, intelligence is only meant to get some extra spirit gauge. keep it as low as at lv-100, or even lower. Your Wisdom is just high enough.
I also advise you to think it over when it comes to buying high-level equips. Because the ones you've bought might become quite useless when you are beyond lv300 unless you want to soulfuse it now...which is also not recommended cuz lving up before lv300 is quite fast if you play on 15* or 20* difficulty. They might be replaced in a short period of time. Buy some equips that are close to your level, so you can sell them to decondelite again once you would like to replace them with new ones and you lose no credits.
You might want a mag rapier, not shortsword, cuz penetrated armor is necessary to fight against PFD monsters. You will want a legendary rapier of slaughter eventually but that's very hard to find right now, so buy and soulfuse a mag rapier of slaughter or legendary of balance(if you don't have any power of balance, this is actually as helpful as slaughter). It will accompany with you for like 100 levels..

Actually i would even suggest STR < DEX. Personaly i rund with Dex = STR + 10.

And no, i wont say anything about this stupid dont soulfuse anything discussion, i am more tired of it as i can even put in words.

I haven't been keeping my PFest records so I don't really know if one is particularly better than the other. But why compare those two when you can use one element and infuse the other element?

doom9ra, holy and dark have the upper edge in SG arenas - but since SGs are equally weak towards both elements, i'd say they are pretty much equal. same goes for the average mob pool, if there is a difference is not that evident, so go for whatever you can afford.
