You can wait until you have all seven types before you start shrining them or just do it as you get them. As long as you have all seven by the end, you'll be good.

If it's like the previous years, you need to turn in at least 1 of each type of chicken to get an exclusive prize for doing so. Turning in multiple of the same type doesn't do anything in terms of getting the exclusive prize.
