Windows 7, macOS Mojave and a touch of Ubuntu 18.04

Mostly Windows for private use and macOS for work.
After trying dual-booting Ubuntu I came to think VM is probably less of a hassle.

Should I go to Windows 10 from Windows 7?

I feel nothing but regret and resentment. Perhaps a light twinge of nostalgia for a different time, a younger time. A better time.

Heard Pro is better tho.

Windows sucks, period.
Win2K was the least sucky, followed by XP.

I would rather use 98 SE than any of their current offerings, if I was forced to use Windows, though.

That's officially just for WoW, right?
Probably isn't too hard to get other programs to use the libraries, though, I guess.

Windows Server user is here. I use Windows Server 2008 R2 as my regular OS for years, and Windows Server 2019 for my desktop PC.
Windows Server can be a brilliant OS for normal PC users, because lots of features you can choose to install or not to install manually, so that you don't need to install the feature that you don't need. Also, this OS have is better in security because it is originally for server use.
Some people say that Windows Server is poor in games, but after I installed the driver of my graphics card, I don't feel any difference between Windows Server and normal Windows like 7 or 10.
By the way, I got my key of Windows Server by using the university email and attend a project of Microsoft, then you can get 2 keys of each Windows Server versions.

It's the same basic kernel design underlying both products. And servers are not inherently more secure. It depends largely upon configuration and what software they are exposing to the network.

If you don't mind your rights, or being used as a live test subject, sure.
If your bad experience amounts to "It's not windows; where's the C: drive and gpedit.msc" then you need to try again.
If it's "no games," then god help you. I just emulate since there are lots of nice emulators and lots of nice console/old computer games I've not played.
Currently playing Skyward Sword.
