Clubs are nice but bad on 1H. The stun will appear on counterattacks even without a club, it's inherent to the 1H style. Although since you brought it up, the stun will probably appear more often on counterattacks if you have a club.
As for gaining overcharge, you will actually gain more overcharge without a club. Because you gain extra overcharge through your counter attacks themselves, not because of the stun. If you stun enemies less often you will make more counter attacks and gain more overcharge, and all the enemies will eventually get stunned anyway with 1H.
Stunning enemies also doesn't help to reduce damage as much as you might think, especially on 1H. Because stunned enemies still sit there building SP/MP and when they wake up they will hit you with supers almost as often. Stuns mainly stop the majority of regular attacks, but you actually
want to take those with 1H so you can make more counter attacks. The parry provided by a rapier, shortsword, or wakizashi further increases the frequency of counter attacks you make and the overcharge you gain.
I also recommend plate over power armor if you are at low levels or struggling to survive. Unfortunately your level is rather high by now to the point where you might want power armor, but you may still mix in some plate. I'm still using half plate at level 316 (it's all I have) and it's still magnificent, at that.
