Today is Good Friday, the most solemn day of the Lenten season, so here's the dish that my wife usually prepares to celebrate the occasion (which involves both fasting and abstinence):
Bacalao a la Vizcaina. A fish dish of Spanish-Portuguese origin, consisting of dried salted codfish, tomatoes, red peppers,
garbanzos, and potatoes cooked in olive oil. Preparing the codfish takes a lot of time, so we have this dish only once a year.
