If you make a mistake, you need to replace the wrong post with "del" and make a whole new post (DO NOT edit the old post with the fix, that will at the very least disqualify you for a week. It has to be a new post AFTER replacing the wrong post with "del"). This is described in rule 2.3 for further reference.
Just read the rules carefully as to what is and is not allowed and you should be fine. In doubt you can always ask here. Piyin may seem a bit aggressive, but I'm quite sure this isn't anything personal. It seems he/she is swamped with work as he/she seems to be the only volunteer currently actively doing things for the Free Shop.
The items are sent out if the volunteers have enough time to do so, it may be every week (which seems to be the goal), once a month or even slower depending on that. Just hold on and assuming nothing changes that renders the Free Shop impossible to maintain you will get your request eventually (if it didn't break the rules). When items are sent out there should be a post saying so, if your request was missed when such a message has been posted, you can bring up the request again in a friendly manner.
